At the end of an episode, where Kathryn almost died, she wanted to celebrate life and that's when she invited Chakotay to this moonlight sail with a bottle of Champagne. Sadly that's when the episode ended so we never got to see it but it is one of the most official shippy moments of the whole show.
I got that sailboat for free, a local furniture store had sent me a voucher for my birthday and I chose this for the equivalent of 10 Euro. I love that you really can put the sails up or down.
And yes, the holodeck is so wonderful! They can create every environment they want, they also wear the proper clothes to fit into the scene better. They once had an Irish village, or a French pub with billiard table... And there are also holodeck characters who are like real people and you can interact with them. And sometimes fall in love with them, which of course is a problem.
I guess it helps them staying sane, since they are always on the ship, to see some change of scenery once in a while.

I don't agree with him about cats though -- my experience is that cats get just as excited for you to get home and are happy to see you for non-food related reasons!
As a cat-owner, very much agreed. Especially love the greeting when I'm the first one up and they just want to say HI for about ten minutes straight. :)
