I would say avoid the classic show for now (and I doubt that's on Netflix anyway).
So... Um. It's generally a good show for just 'jumping on whenever', as certainly every new season does a quick overview & explanation of the basics. The show came back in 2005 with a new 'S1' featuring the Ninth Doctor. So, let me do a v short guide:
S1 - Ninth Doctor S2 - S4 Tenth Doctor S5 - S7 Eleventh Doctor S8 - S10 Twelfth Doctor
(S11 - due to air in the autumn - will feature the Thirteenth Doctor)
Every season has 12-13 episodes, plus a Christmas Special, and sometimes there are Specials outside of the regular run.)
Obviously I think you should start with S1 and work your way through, but it also depends on how much/how fast you want to watch, and of course whether you get on with the show. If a particular Doctor or Companion doesn't do anything for you, just skip to the next one.
I hope any of this makes sense. :)
If you don't feel like watching ALL THE THINGS, start with S5. IMHO It's the most delightful season (apart from S10, which is a close second).
S1 is a bit wobbly, but then they were literally re-creating the show and working out how to do it as they went along. So you can always just watch a few episodes and see how you like it?

And now I am v curious as to what you will make of my [other*] show. I find it fascinating which ways people's likes (and dislikes) overlap (or not) when in another 'verse.

What other show?? I should probably have said 'verse. I love many shows, but only two 'verses have ever properly grabbed me - BtV & AtS and Doctor Who (and attendant spin-offs in varying degrees).
And it's funny, because neither show/verse hit me immediately, but once they did... yeah, still there. :)
ETA: I got Netflix and am currently binge-watching Star Trek in all of its incarnations Star Trek is one of the shows I never watched. Partly due to growing up without a TV... Happy binge-watching!

After all, new Doctor! Colin Baker is very pro a female Doctor, not least because of aforementioned daughters. Also he was v pleased at our three. <3
